Hillbilly Tacos
Ingredients
1 lb ground beef or shredded pork
1 packet taco seasoning mix
1 small onion, finely chopped
2 cloves garlic, minced
8 small flour tortillas
1 cup shredded cheddar cheese
1 cup shredded lettuce
1 cup diced tomatoes
1/2 cup diced red onion
1/2 cup chopped fresh cilantro
1/2 cup shredded red cabbage
1/2 cup sour cream
1/2 cup salsa or hot sauce
Lime wedges (for serving)
Directions
In a large skillet, cook the ground beef or shredded pork over medium heat until browned and cooked through. Drain excess fat.
Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
Stir in the taco seasoning mix and a small amount of water according to the seasoning packet instructions. Simmer until the sauce thickens and the meat is well coated with seasoning.
Warm the flour tortillas in a dry skillet or microwave until soft and pliable.
To assemble the tacos, place a portion of the seasoned meat in the center of each tortilla.
Top with shredded cheddar cheese, shredded lettuce, diced tomatoes, diced red onion, chopped fresh cilantro, and shredded red cabbage.
Drizzle with sour cream and salsa or hot sauce.
Serve with lime wedges on the side.
