Homemade Twice Baked Cauliflower Recipe

serves 6 and 1/6th is considered zero points.(old plan)

INGREDIENTS:

  • 1 large head of cauliflower, broken into pieces
  • ¼ cup of low fat sour cream
  • ½ cup cheddar cheese, fat free, shredded
  • A dash of olive oil
  • Salt, pepper, and garlic powder to taste

DIRECTIONS:

  1. Preheat oven to 400 degrees
  2. Rinse cauliflower and rip or cut into smaller pieces
  3. Place in a large sauce pan and put approximately ¾ cup of water
  4. Cover with lid and steam over low flame for about 12 minutes
  5. Mash cauliflower with a potato masher
  6. Add in sour cream, cheese, and seasonings
  7. Add just enough olive oil to a Pyrex dish to coat it
  8. Add the cauliflower mixture to the Pyrex dish
  9. Bake for about 45 minutes or until crispy on top
