Honey Lime Chicken & Avocado Rice Stack

🛒 Ingredients
🍗 For the Honey Lime Chicken
2 large boneless, skinless chicken breasts
2 tbsp olive oil
2 tbsp honey
Zest of 1 lime
2 tbsp fresh lime juice
2 cloves garlic, minced
½ tsp smoked paprika
½ tsp salt
¼ tsp black pepper
🍚 For the Rice
1 cup jasmine or basmati rice
2 cups water or chicken broth
¼ tsp salt
1 tbsp lime juice
2 tbsp chopped fresh cilantro
🥑 For the Avocado Layer
2 ripe avocados, diced
1 tbsp lime juice
Salt & pepper to taste
1 tbsp chopped cilantro (optional)
🥗 Optional Toppings
Cherry tomatoes, diced
Corn kernels (fresh or grilled)
Red onion, finely chopped
Extra drizzle of honey-lime sauce
👩🍳 Instructions
1️⃣ Marinate the Chicken
In a bowl, whisk olive oil, honey, lime zest, lime juice, garlic, paprika, salt, and pepper.
Add chicken and coat well.
Marinate at least 20–30 minutes (or up to 4 hours for deeper flavor).
2️⃣ Cook the Rice
Rinse rice under cold water until water runs clear.
In a saucepan, bring water (or broth) and salt to a boil.
Add rice, reduce heat to low, cover, and simmer 15 minutes.
Remove from heat and let sit covered 5 minutes.
Fluff with fork, then stir in lime juice and cilantro.
3️⃣ Cook the Chicken
Skillet Method:
Heat a skillet over medium-high heat.
Cook chicken 5–6 minutes per side until golden and internal temp reaches 165°F (74°C).
Let rest 5 minutes, then dice into small cubes.
Grill Option:
Grill over medium heat 6–7 minutes per side for a smoky flavor.
4️⃣ Prepare the Avocado Layer
In a bowl, gently toss diced avocado with lime juice, salt, pepper, and cilantro.
Keep chilled until ready to assemble.
5️⃣ Assemble the Rice Stack
For a beautiful stacked presentation:
Place a round mold (or a clean empty can with both ends removed) on a plate.
Add a layer of rice and press gently.
Add a layer of diced honey lime chicken.
Top with avocado mixture.
Carefully remove the mold.
Repeat for remaining servings.
6️⃣ Finish & Serve
Top with cherry tomatoes, corn, or red onion.
Drizzle with extra honey-lime sauce if desired.
Garnish with fresh cilantro.
Serve immediately while chicken is warm and avocado is fresh.
