Honey Lime Chicken & Avocado Rice Stack

🛒 Ingredients

🍗 For the Honey Lime Chicken

  • 2 large boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • 2 tbsp honey

  • Zest of 1 lime

  • 2 tbsp fresh lime juice

  • 2 cloves garlic, minced

  • ½ tsp smoked paprika

  • ½ tsp salt

  • ¼ tsp black pepper


🍚 For the Rice

  • 1 cup jasmine or basmati rice

  • 2 cups water or chicken broth

  • ¼ tsp salt

  • 1 tbsp lime juice

  • 2 tbsp chopped fresh cilantro


🥑 For the Avocado Layer

  • 2 ripe avocados, diced

  • 1 tbsp lime juice

  • Salt & pepper to taste

  • 1 tbsp chopped cilantro (optional)


🥗 Optional Toppings

  • Cherry tomatoes, diced

  • Corn kernels (fresh or grilled)

  • Red onion, finely chopped

  • Extra drizzle of honey-lime sauce


👩‍🍳 Instructions


1️⃣ Marinate the Chicken

  1. In a bowl, whisk olive oil, honey, lime zest, lime juice, garlic, paprika, salt, and pepper.

  2. Add chicken and coat well.

  3. Marinate at least 20–30 minutes (or up to 4 hours for deeper flavor).


2️⃣ Cook the Rice

  1. Rinse rice under cold water until water runs clear.

  2. In a saucepan, bring water (or broth) and salt to a boil.

  3. Add rice, reduce heat to low, cover, and simmer 15 minutes.

  4. Remove from heat and let sit covered 5 minutes.

  5. Fluff with fork, then stir in lime juice and cilantro.


3️⃣ Cook the Chicken

Skillet Method:

  1. Heat a skillet over medium-high heat.

  2. Cook chicken 5–6 minutes per side until golden and internal temp reaches 165°F (74°C).

  3. Let rest 5 minutes, then dice into small cubes.

Grill Option:
Grill over medium heat 6–7 minutes per side for a smoky flavor.


4️⃣ Prepare the Avocado Layer

  1. In a bowl, gently toss diced avocado with lime juice, salt, pepper, and cilantro.

  2. Keep chilled until ready to assemble.


5️⃣ Assemble the Rice Stack

For a beautiful stacked presentation:

  1. Place a round mold (or a clean empty can with both ends removed) on a plate.

  2. Add a layer of rice and press gently.

  3. Add a layer of diced honey lime chicken.

  4. Top with avocado mixture.

  5. Carefully remove the mold.

Repeat for remaining servings.


6️⃣ Finish & Serve

  • Top with cherry tomatoes, corn, or red onion.

  • Drizzle with extra honey-lime sauce if desired.

  • Garnish with fresh cilantro.

Serve immediately while chicken is warm and avocado is fresh.

  • Add a spoon of Greek yogurt mixed with lime zest for a creamy drizzle.

  • Swap white rice for brown rice or quinoa for a healthier twist.

  • Add black beans for extra protein and texture.

  • Want heat? Add chili flakes or diced jalapeños to the marinade.
