Honey Lime Chicken & Avocado Nacho Wonton Tacos

Crispy wonton shells filled with juicy honey-lime chicken, creamy avocado, fresh vegetables, cheddar, and crunchy nacho chips. The recipe makes 12 wonton tacos and takes about 35 minutes.

Ingredients

For the Honey Lime Chicken

  • 2 boneless, skinless chicken breasts, diced
  • 2 tbsp honey
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper

For the Wonton Shells

  • 12 wonton wrappers
  • Cooking spray or 1 tbsp olive oil

For the Toppings

  • 1 large avocado, diced
  • 1 cup shredded lettuce
  • ½ cup cherry tomatoes, diced
  • ¼ cup finely chopped red onion
  • ½ cup crushed nacho chips
  • ¼ cup shredded cheddar cheese
  • 2 tbsp fresh cilantro, chopped

Optional Lime Drizzle

  • ¼ cup Greek yogurt
  • 1 tbsp lime juice
  • 1 tsp honey

Instructions

  1. Make the wonton shells: Preheat the oven to 375°F (190°C). Lightly spray both sides of the wonton wrappers. Place each wrapper between the bars of an inverted muffin tin to form a taco shape. Bake for 7–9 minutes, until golden and crispy. Remove and cool.
  2. Prepare the chicken: In a bowl, whisk together honey, lime juice, olive oil, garlic powder, paprika, cumin, salt, and pepper. Add the diced chicken and toss until well coated.
  3. Heat a skillet over medium-high heat. Cook the chicken for 6–8 minutes, stirring occasionally, until completely cooked and lightly caramelized.
  4. Make the lime drizzle: Mix Greek yogurt, lime juice, and honey until smooth.
  5. Assemble: Fill each crispy wonton shell with shredded lettuce, then add honey-lime chicken. Top with avocado, tomatoes, red onion, cheddar cheese, and crushed nacho chips.
  6. Drizzle with the lime sauce and garnish with fresh cilantro.
  7. Serve immediately while the wonton shells are crisp.

Tips

  • Bake the wonton shells close to serving time for maximum crispiness.
  • Rotisserie chicken can be used as a shortcut.
  • Add sliced jalapeños for extra heat.
  • For a lighter version, use baked tortilla cups instead of fried shells.
