Ingredients:
6 medium Russet potatoes (or Yukon Gold for creamier texture)
1 onion, diced
3 carrots, sliced
3 stalks celery, diced

Directions:
1. Cook the Bacon: In a large pot, cook the bacon until crispy. Set aside and let it drain on paper towels. Leave some fat in the pot for flavor!
