Ingredients:
4 cod fillets
Salt and pepper, to taste
2 tablespoons olive oil
4 tablespoons unsalted butter
3 cloves garlic, minced
Zest of 1 lemon
Juice of 1 lemon
2 tablespoons chopped fresh parsley
Instructions:
Season Cod Fillets: Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
Sauté Cod: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the cod fillets to the skillet and cook for 3-4 minutes on each side, or until the fish is opaque and flakes easily with a fork. Remove the cod from the skillet and transfer to a plate.
Make Lemon Butter Sauce: In the same skillet, reduce the heat to medium and add the butter. Once the butter has melted, add the minced garlic and cook for 1-2 minutes, or until fragrant. Be careful not to let the garlic brown.
Add Lemon Zest and Juice: Add the lemon zest and lemon juice to the skillet, stirring to combine. Cook for another 1-2 minutes, allowing the flavors to meld together.
Finish and Serve: Return the cooked cod fillets to the skillet, spooning the lemon butter sauce over the top. Cook for an additional 1-2 minutes to warm the fish through. Sprinkle chopped parsley over the cod just before serving.
Serve: Serve the Lemon Butter Sautéed Cod hot, garnished with additional parsley if desired. Enjoy your flavorful and light seafood dish!
