Lemon Dijon Chicken Couscous Bowl with Garlic Feta Yogurt Sauce

🛒 Ingredients (Serves 4)
🍗 Lemon Dijon Chicken
1½ lbs (680g) boneless, skinless chicken breasts or thighs
2 tbsp olive oil
2 tbsp Dijon mustard
2 tbsp fresh lemon juice
1 tsp lemon zest
3 cloves garlic, minced
1 tsp dried oregano
½ tsp paprika
¾ tsp salt
½ tsp black pepper
🍚 Couscous Base
1 cup dry couscous
1 cup boiling chicken broth (or water)
1 tbsp olive oil
¼ tsp salt
2 tbsp chopped fresh parsley
🥗 Fresh Toppings
1 cup cherry tomatoes, halved
1 cup cucumber, diced
¼ red onion, thinly sliced
½ cup canned chickpeas, drained & rinsed
¼ cup kalamata olives, sliced
Extra parsley or dill for garnish
🧄 Garlic Feta Yogurt Sauce
¾ cup plain Greek yogurt
½ cup crumbled feta cheese
1–2 cloves garlic
1 tbsp lemon juice
1 tbsp olive oil
1–3 tbsp water (to thin)
Black pepper to taste
Blend until smooth and creamy. Adjust thickness with water.
👩🍳 Instructions
1️⃣ Marinate the Chicken
In a bowl, whisk together olive oil, Dijon mustard, lemon juice, zest, garlic, oregano, paprika, salt, and pepper.
Add chicken and coat well.
Marinate at least 30 minutes (or up to 8 hours in the fridge).
2️⃣ Cook the Chicken
🔥 Skillet Method
Heat a pan over medium heat.
Cook chicken 5–7 minutes per side (depending on thickness).
Internal temperature should reach 165°F (74°C).
Rest 5 minutes, then slice.

Grill over medium heat 5–6 minutes per side.
Rest before slicing.
3️⃣ Prepare the Couscous
Place couscous in a heatproof bowl.
Add salt and olive oil.
Pour boiling broth over it.
Cover and let sit 5 minutes.
Fluff with a fork and stir in parsley.
4️⃣ Make the Sauce
Blend yogurt, feta, garlic, lemon juice, olive oil, and pepper until smooth.
Chill until ready to serve.
5️⃣ Assemble the Bowls
Divide couscous into bowls.
Top with sliced chicken.
Add tomatoes, cucumber, onion, chickpeas, and olives.
Drizzle generously with garlic feta yogurt sauce.
Garnish with herbs and extra lemon if desired.
