Low Carb Chicken Bacon Ranch Casserole
2lbs cooked chicken (cut into cubes)
8-10 slices of cooked bacon (chopped)
2 Tbsp minced garlic
1/2 cup sour cream
2 Tbsp Dry Ranch Seasoning Mix
1 cup Mozzarella shredded cheese (divided)
1 cup Cheddar shredded cheese (divided)
1 small bag of broccoli/ cauliflower (ready to eat) – steamed in bag for 3 min
Preheat oven to 375F
Combine chicken, bacon (leave some for topping), steamed vegetables, sour cream, seasoning and half of both cheeses.
Blend well, and transfer to baking dish (I used glass 9×13)
Top with remaining cheese, bacon and sprinkle more Ranch Seasoning if desired
Bake 15 min
