Low Carb ‘Potato’ Skins

Cauliflower is a great substitute for those potatoes that are packed with all those terrible carbs.

**• Low Carb ‘Potato’ Skins •
**Ingredients:
1 (24 oz) bag of cauliflower florets
1 egg
1/2 cup grated Parmesan cheese
salt and pepper as desired
1/4 cup of butter
Toppings:
1/2 cup shredded cheddar cheese
Bacon crumbles as desired
Chives
Sour cream
Instructions:
Preheat oven to 350 degrees. Spray a muffin tin pan with olive oil.
Steam cauliflower florets until they are soft, Add the cauliflower to a bowl, smash it, add butter, salt, and pepper and mix. Add egg and Parmesan cheese then mix thoroughly.
Divide the mixture into the greased muffin pan. Bake for 25-35 minutes. Remove and top with cheese and bacon crumbles. Then place back in the oven for about 5 minutes or until the cheese is bubbly. Let set for 5 minutes before removing from pan then top with sour cream and chives!
