Directions
In a large mixing bowl, combine the ground turkey, almond flour, Parmesan cheese, grated zucchini, egg, minced garlic, oregano, basil, salt, and pepper. Mix until all the ingredients are well incorporated.
Shape the mixture into small patties, about 2 inches in diameter and 1/2 inch thick.
Heat the olive oil in a large skillet over medium heat.
Once the oil is hot, add the patties to the skillet in a single layer, making sure not to overcrowd the pan.
Cook each side for about 4-5 minutes, or until the fritters are golden brown and cooked through.
Remove from the skillet and place on a paper towel-lined plate to drain any excess oil.
Serve hot with your choice of sides.
Variations & Tips
If you’re not a fan of zucchini, you can replace it with grated carrots or even chopped spinach. Adding some finely chopped onions or bell peppers to the mixture can also give the fritters an extra burst of flavor. For a bit of a spicy kick, throw in some red pepper flakes or a dash of hot sauce to the mix. These fritters also freeze well, so you can double the recipe and save some for a quick meal later on.
