Chicken & Vegetables

  • 1½ lbs (680 g) boneless, skinless chicken breasts or thighs

  • 3 medium zucchini, sliced into rounds or half-moons

  • 1 cup cherry tomatoes, halved

  • ⅓ cup red onion, thinly sliced

  • 3 cloves garlic, minced

Mediterranean Marinade

  • 3 tablespoons olive oil

  • Zest and juice of 1 lemon

  • 1½ teaspoons dried oregano

  • 1 teaspoon dried basil

  • ½ teaspoon paprika

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

Topping

  • ½ cup crumbled feta cheese

  • ¼ cup pitted Kalamata olives, sliced

  • 2 tablespoons fresh parsley or basil, chopped


🔪 Instructions

  1. Preheat Oven
    Preheat oven to 400°F (205°C). Lightly grease a 9×13-inch baking dish.

  2. Season the Chicken
    In a large bowl, whisk olive oil, lemon zest, lemon juice, oregano, basil, paprika, salt, and pepper.
    Toss chicken in marinade until well coated.

  3. Assemble the Bake
    Spread zucchini, tomatoes, onion, and garlic evenly in the baking dish.
    Place chicken on top. Pour remaining marinade over everything.

  4. Bake
    Cover loosely with foil and bake for 20 minutes.

  5. Add Toppings
    Remove foil. Sprinkle feta and olives over the dish.

  6. Finish Baking
    Return to oven uncovered and bake 10–15 minutes more, until chicken reaches 165°F (74°C) and zucchini is tender.
