Mediterranean Chicken Zucchini Bake

This recipe combines chicken breasts, zucchini, cherry tomatoes, red onion, garlic, Mediterranean herbs, and feta.
Ingredients
- 4 boneless, skinless chicken breasts
- 3 medium zucchini, sliced
- 1 cup cherry tomatoes, halved
- ½ cup red onion, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- ½ teaspoon red pepper flakes, optional
- ½ teaspoon salt, or to taste
- ½ teaspoon black pepper
- ½ cup crumbled feta cheese
- 2 tablespoons olive oil
Instructions
- Preheat oven: Heat oven to 400°F (200°C).
- Prepare the chicken: Season chicken breasts with salt, pepper, and half of the oregano, basil, and thyme.
- Sear the chicken: Heat 1 tablespoon olive oil in a large skillet over medium heat. Cook chicken for about 5 minutes per side, until nicely browned. It doesn’t need to be completely cooked yet.
- Prepare the vegetables: In a large bowl, combine zucchini, cherry tomatoes, red onion, garlic, and the remaining herbs. Add the remaining olive oil and toss well.
- Assemble: Place the seared chicken in a baking dish. Spread the zucchini and tomato mixture around and over the chicken.
- Bake: Cover with foil and bake for 25 minutes.
- Add feta: Remove the foil and sprinkle feta evenly over the top. Return to the oven and bake uncovered for another 10–15 minutes, until the chicken is fully cooked and the vegetables are tender.
- Rest and serve: Let the bake rest for 5 minutes before serving.
🍋 Serving Suggestions
Serve with Greek salad, quinoa, couscous, rice, or crusty bread. A squeeze of fresh lemon over the top adds a lovely Mediterranean finish.
Tip: For food safety, check that the thickest part of the chicken reaches 165°F (74°C) before serving.
