🥣 Instructions
1. Mix Dry Ingredients
In a medium bowl, whisk together:
Flour
Sugar
Baking powder
Salt
2. Mix Wet Ingredients
In another bowl, whisk:
Milk
Egg
Melted butter
Vanilla
3. Combine
Pour the wet ingredients into the dry ingredients.
Gently whisk until just combined — do NOT overmix.
A few lumps are fine!
Let the batter rest for 3–5 minutes for fluffier pancakes.
4. Preheat Your Pan
Heat a non-stick pan or griddle over medium-low heat.
Lightly grease with butter or oil.
5. Cook Mini Pancakes
Use a teaspoon or small cookie scoop to drop small circles of batter onto the hot pan (about 1–2 inch size).
Cook until:
Bubbles form on the surface
Edges look set
Flip and cook another 30–60 seconds until golden.
Repeat with remaining batter.
6. Serve Warm
