Pecan Cheesecake Pie

Ingredients

  • 1 unbaked pie shell
  • 1 tub cream cheese at room temperature
  • 1 cup chopped pecans
  • ¼ cup brown sugar
  • ¼ cup white sugar
  • 4 eggs
  • 1 cup light corn syrup
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 425°F.
  • Beat 1 of the eggs with the cream cheese, white sugar, and vanilla extract.
  • Spread this mixture evenly in an unbaked pie crust.
  • Sprinkle the nuts on top.
  • Next, beat the rest of the eggs with the brown sugar and corn syrup.
  • Pour this mixture over the nuts in the pie crust.
  • Bake for 10 minutes.
  • Turn the heat down to 375°F and bake for another 25 minute or until set.
  • Cool the pie on a wire rack, then cut into slices to serve.
