Pickled Beets..

To be honest, I never paid any attention to pickled beets at family get-togethers for the majority of my life. They appeared bright, enigmatic, and, to be honest, a little terrifying as they sat silently in a small dish next to the potato salad. I never understood my grandmother’s preoccupation with them.

Last weekend, that was altered.

A jar of pickled beets that my sister had been preparing for months was brought over. “You have to try these chilled with dinner,” she insisted repeatedly.After one taste, I suddenly understood why people swear by them, despite my initial scepticism. They were refreshing, earthy, tart, sweet, and unexpectedly soothing.
