Pineapple Cucumber Salad

Ingredients

  • 2 cups fresh pineapple, diced

  • 1 large English cucumber, sliced or diced

  • ¼ red onion, very thinly sliced

  • 2 tbsp fresh cilantro, chopped (or mint)

  • 1 tbsp lime juice (fresh)

  • 1 tbsp olive oil

  • 1 tsp honey or maple syrup (optional)

  • ¼ tsp salt

  • ¼ tsp black pepper

  • Optional: pinch of chili flakes or Tajín


Instructions

  1. Add pineapple, cucumber, red onion, and cilantro to a large bowl.

  2. In a small bowl, whisk lime juice, olive oil, honey, salt, and pepper.

  3. Pour dressing over salad and toss gently to coat.

  4. Chill 10–15 minutes for best flavor.

  5. Taste and adjust seasoning before serving.
