Ingredients:
1 pound Polish kielbasa, sliced
4 medium potatoes, peeled and diced
1 onion, chopped
2 carrots, sliced
3 cloves garlic, minced
6 cups chicken broth
1 cup heavy cream
2 teaspoons dried thyme
1 teaspoon paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
In a large pot, add the sliced kielbasa and cook over medium heat until browned, about 5 minutes. Remove and set aside.
In the same pot, add onions, carrots, and garlic. Sauté until the onions are translucent, about 3-4 minutes.
Add the diced potatoes, chicken broth, thyme, paprika, salt, and pepper. Bring to a boil.
Reduce heat and let simmer until the potatoes are tender, about 15-20 minutes.
Stir in the heavy cream and the cooked kielbasa. Simmer for an additional 5 minutes to heat through.
Serve hot, garnished with fresh parsley.
