Purple Sweet Potato (Ube) Drink

Ingredients

  • 500 g purple sweet potato (ube), peeled and cubed
  • 1 liter water
  • 1 cup sugar (adjust to taste)
  • 1 can (400 ml) coconut milk or evaporated milk
  • 1 tsp vanilla extract (optional)
  • Ice (for serving)

Instructions

  1. Boil the purple sweet potato in water until very soft (20–25 minutes).
  2. Transfer the sweet potato and cooking water to a blender.
  3. Blend until completely smooth.
  4. Strain if you want a smoother drink.
  5. Return to a pot and add sugar.
  6. Simmer for 5–10 minutes, stirring until dissolved.
  7. Stir in coconut milk or evaporated milk.
  8. Let cool completely.
  9. Bottle and refrigerate.
  10. Shake before serving.

For a Fermented or Alcoholic Version

The bottles in the image could also contain a homemade liqueur. A basic version would be:

  • 500 g purple sweet potato, cooked and mashed
  • 1 liter vodka or white rum
  • 250–500 g sugar
  • Infuse for 2–4 weeks, strain, and bottle.
