Purple Sweet Potato (Ube) Drink
Ingredients
- 500 g purple sweet potato (ube), peeled and cubed
- 1 liter water
- 1 cup sugar (adjust to taste)
- 1 can (400 ml) coconut milk or evaporated milk
- 1 tsp vanilla extract (optional)
- Ice (for serving)
Instructions
- Boil the purple sweet potato in water until very soft (20–25 minutes).
- Transfer the sweet potato and cooking water to a blender.
- Blend until completely smooth.
- Strain if you want a smoother drink.
- Return to a pot and add sugar.
- Simmer for 5–10 minutes, stirring until dissolved.
- Stir in coconut milk or evaporated milk.
- Let cool completely.
- Bottle and refrigerate.
- Shake before serving.
For a Fermented or Alcoholic Version
The bottles in the image could also contain a homemade liqueur. A basic version would be:
- 500 g purple sweet potato, cooked and mashed
- 1 liter vodka or white rum
- 250–500 g sugar
- Infuse for 2–4 weeks, strain, and bottle.
