FOR THE CAKE:
- 2 eggs
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 1/2 teaspoons baking soda
- 1 teaspoon vanilla
- 2/3 cup nuts, chopped
- 1 (20 oz) can crushed pineapple, with juice
FOR THE FROSTING:
- 8 oz cream cheese
- 1 stick (1/2 cup) butter
- 2 cups powdered sugar
- 2 teaspoons vanilla
FOR TOPPING:
PREPARATION
- Preheat oven to 350°F.
- Mix cake batter ingredients together by hand and pour into a 9×13-inch baking dish.
- Bake 30-35 minutes, until a toothpick inserted into the center comes out clean.
- While cake cools, beat together the butter and cream cheese for the frosting. Add powdered sugar and beat until smooth.
- Spread frosting over cooled cake and top with chopped nuts. Serve, and enjoy!
