Recipe Tin Project: Swedish Nut Cake

FOR THE CAKE:
  • 2 eggs
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon vanilla
  • 2/3 cup nuts, chopped
  • 1 (20 oz) can crushed pineapple, with juice
FOR THE FROSTING:
  • 8 oz cream cheese
  • 1 stick (1/2 cup) butter
  • 2 cups powdered sugar
  • 2 teaspoons vanilla
FOR TOPPING:
  • 2/3 cup nuts, chopped
PREPARATION
  1. Preheat oven to 350°F.
  2. Mix cake batter ingredients together by hand and pour into a 9×13-inch baking dish.
  3. Bake 30-35 minutes, until a toothpick inserted into the center comes out clean.
  4. While cake cools, beat together the butter and cream cheese for the frosting. Add powdered sugar and beat until smooth.
  5. Spread frosting over cooled cake and top with chopped nuts. Serve, and enjoy!
