Roasted Cauliflower & Chickpea Dish — Full Recipe
A simple, healthy, and flavorful roasted dish with crispy cauliflower, golden chickpeas, warm spices, and a bright lemon finish. Perfect as a side dish or a light vegetarian meal.
Ingredients
1 medium cauliflower, cut into florets
1 can (400 g) chickpeas, drained and rinsed
3 tablespoons olive oil
3 garlic cloves, minced
1 teaspoon paprika
½ teaspoon cumin
½ teaspoon turmeric (optional)
½ teaspoon chili flakes (optional)
Salt and black pepper to taste
For Finishing
Juice of ½ lemon
2 tablespoons fresh parsley or cilantro, chopped
2 tablespoons tahini or yogurt sauce (optional)
Instructions
1. Preheat the Oven
Preheat oven to 200°C (400°F).
Line a baking tray with parchment paper.
2. Prepare the Vegetables
Place cauliflower florets and chickpeas in a large bowl.
Add olive oil, garlic, paprika, cumin, turmeric, chili flakes, salt, and pepper.
Toss until everything is evenly coated.
3. Roast
Spread the mixture on the baking tray in a single layer.
Roast for 25–30 minutes, stirring halfway through.
Cook until cauliflower is golden and slightly crispy.
4. Finish the Dish
Remove from oven.
Drizzle with fresh lemon juice.
Sprinkle with chopped parsley or cilantro.
5. Serve
Serve warm with:
