🧾 Ingredients

For the chicken:

  • 2 large chicken breasts (or 4 small), halved lengthwise
  • Salt and black pepper (to taste)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 tbsp olive oil

For the sauce:

  • 3–4 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved) or 1 can (400g) diced tomatoes
  • ½ cup chicken broth
  • ½ cup heavy cream (optional)
  • ½ cup grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • ½ tsp chili flakes (optional)
  • 1 cup fresh basil leaves (chopped)

👨‍🍳 Instructions

  1. Season the chicken
    Pat dry and season both sides with salt, pepper, garlic powder, and paprika.
  2. Cook the chicken
    Heat olive oil in a skillet over medium-high heat.
    Cook chicken for 4–5 minutes per side until golden and cooked through.
    Remove and set aside.
  3. Prepare the sauce
    In the same skillet, sauté garlic for about 30 seconds.
    Add tomatoes and cook 3–4 minutes until softened.
    Pour in chicken broth and scrape the pan.
