 Ingredients

For the Pork

  • 3–4 lb (1.4–1.8 kg) boneless pork shoulder or pork butt
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme

For the Slow Cooker Sauce

  • 1 cup beef or chicken broth
  • ½ cup balsamic vinegar
  • ⅓ cup brown sugar
  • 2 tbsp Worcestershire sauce
  • 2 tbsp soy sauce
  • 6 cloves garlic, minced
  • 2 tbsp Dijon mustard
  • 1 tsp dried rosemary
  • ½ tsp crushed red pepper flakes (optional)

Optional Thickened Glaze

  • 2 tbsp cornstarch
  • 2 tbsp cold water

Garnish

  • Fresh parsley, chopped

 Instructions

Step 1: Season the Pork

Pat the pork roast dry with paper towels. Combine the salt, pepper, smoked paprika, garlic powder, onion powder, and thyme. Rub the seasoning evenly over every side of the roast.

Step 2: Sear the Roast

Heat olive oil in a large skillet over medium-high heat. Sear the pork for about 3–4 minutes per side until a deep golden-brown crust forms. This step locks in flavor and gives the roast its rich color.

Step 3: Make the Sauce

In a medium bowl, whisk together:

  • Beef broth
  • Balsamic vinegar
  • Brown sugar
  • Worcestershire sauce
  • Soy sauce
  • Dijon mustard
  • Minced garlic
  • Rosemary
  • Red pepper flakes (if using)

Step 4: Slow Cook

Place the seared pork into the slow cooker.

Pour the sauce over the roast, making sure it coats the meat.

Cover and cook:

  • LOW: 8–10 hours (best option)
  • HIGH: 5–6 hours

The pork is done when it easily pulls apart with two forks.

Step 5: Make the Glaze (Optional)

Transfer the pork to a platter and loosely cover with foil.

Pour the cooking liquid into a saucepan.

Mix the cornstarch with cold water until smooth, then stir it into the sauce.

Simmer over medium heat for 3–5 minutes, stirring frequently, until thick and glossy.

Step 6: Shred & Serve

Shred the pork into large pieces or slice if preferred.

Drizzle generously with the thickened balsamic glaze.

Garnish with chopped parsley before serving.
