Slow Cooker Cabbage & Potatoes

This Slow Cooker Cabbage & Potatoes is a simple, wholesome, and budget-friendly side dish that’s packed with flavor. Tender cabbage wedges and buttery potatoes are slow-cooked with onions, garlic, and a savory herb broth until perfectly soft. It’s an excellent side for corned beef, roasted chicken, pork chops, or smoked sausage.

📝 Ingredients

  • 1 medium green cabbage, cut into 6–8 wedges
  • 2 lbs (900 g) Yukon Gold or baby potatoes, peeled and cut into large chunks
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2½ cups vegetable or chicken broth
  • 3 tbsp unsalted butter, cut into pieces
  • 2 tbsp olive oil
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard (optional)
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 2 bay leaves

Optional Garnish

  • Fresh chopped parsley
  • Cracked black pepper
  • Extra butter for serving

👩‍🍳 Instructions

Step 1: Prepare the Vegetables

Wash the cabbage and cut it into large wedges, keeping the core intact so the wedges hold together. Peel and cube the potatoes into large bite-sized pieces.

Step 2: Layer the Slow Cooker

Spread the diced onion and minced garlic over the bottom of the slow cooker.

Add the potatoes in an even layer, then arrange the cabbage wedges on top.

Step 3: Make the Broth

In a bowl, whisk together:

  • Vegetable or chicken broth
  • Olive oil
  • Worcestershire sauce
  • Dijon mustard
  • Thyme
  • Parsley
  • Garlic powder
  • Onion powder
  • Salt
  • Black pepper
  • Paprika

Pour the mixture evenly over the vegetables.

Top with the butter pieces and bay leaves.

Step 4: Cook

Cover and cook:

  • LOW: 6–7 hours
  • HIGH: 3–4 hours

The potatoes should be fork-tender, and the cabbage should be soft but still hold its shape.

Step 5: Serve

Remove the bay leaves.

Carefully transfer the cabbage wedges and potatoes to a serving dish. Spoon the flavorful broth over the top and garnish with fresh parsley and cracked black pepper.
