Slow Cooker Stuffed Pepper Meatloaf
Some recipes just feel like home, and this Slow Cooker Stuffed Pepper Meatloaf is one of those meals for me.
I first thought about making it after a family member mentioned how much they loved stuffed peppers but wished there were an easier way to get all those comforting flavors onto the dinner table. I loved the idea, but I also wanted something hearty enough to feed everyone without standing over the stove all evening.
So one weekend, I decided to combine two of my favorite comfort foods: stuffed peppers and classic meatloaf.
The result was even better than I expected.
I made this for my family last weekend, and by the time dinner rolled around, the house smelled incredible. The meatloaf was tender and juicy, the peppers added a lovely sweetness, and the melted cheese tucked inside made every slice feel like a little surprise.
Everyone loved it.
What I especially like about this recipe is that the slow cooker does most of the work. I can put everything together earlier in the day, get it cooking, and then forget about dinner for a while.
It’s the kind of recipe I reach for on a busy day, a lazy Sunday, or honestly, whenever I need a little comfort.
Why You’ll Love This Stuffed Pepper Meatloaf
If you love traditional meatloaf and stuffed peppers, you’re going to have a hard time resisting this combination.
You get:
Tender, flavorful ground beef
Sweet bell peppers
Melty cheese in the center
A savory tomato glaze
Minimal hands-on cooking
A hearty family-friendly dinner
And because it’s made in the slow cooker, you don’t have to worry about keeping an eye on the oven.
Ingredients
For the Meatloaf
2 pounds ground beef

½ teaspoon Italian seasoning
How to Make Slow Cooker Stuffed Pepper Meatloaf
1. Prepare the meat mixture
In a large bowl, combine the ground beef, chopped onion, green bell pepper, red bell pepper, garlic, cooked rice, egg, breadcrumbs, ketchup, Worcestershire sauce, Italian seasoning, paprika, salt, and black pepper.
Mix everything together gently until combined.
Try not to overmix the meat. I’ve learned that a light hand makes a much more tender meatloaf.
2. Add the cheesy center
Place half of the meat mixture onto a piece of parchment paper or a clean work surface.
Shape it into a thick rectangle.
Sprinkle the shredded cheese down the center, leaving some space around the edges.
Cover with the remaining meat mixture and carefully shape everything into a loaf, making sure the cheese is completely enclosed.
This is my favorite part because you don’t see that cheesy center until you cut into the finished meatloaf.
3. Prepare the slow cooker
Lightly grease the inside of your slow cooker.
If you have a slow cooker rack, you can use it to keep the meatloaf slightly elevated. Otherwise, place the meatloaf directly into the cooker.
I like lining the bottom with a strip of parchment paper with the edges sticking out. It makes lifting the finished meatloaf out much easier.
4. Mix the sauce
In a small bowl, combine the ketchup, brown sugar, Worcestershire sauce, tomato paste, garlic powder, and Italian seasoning.
Stir until smooth.
Spread about half of the sauce over the top of the meatloaf.
Save the rest for later.
5. Slow cook
Cover and cook on LOW for about 5–7 hours, or until the center of the meatloaf reaches a safe internal temperature of 160°F (71°C).
Cooking time can vary depending on your slow cooker and the shape of the loaf, so a meat thermometer is the best way to check.
6. Add the finishing sauce
When the meatloaf is nearly finished, spread the remaining sauce over the top.
If your slow cooker allows it, leave the lid slightly ajar for a few minutes to let the sauce thicken.
You can also transfer the cooked meatloaf to a baking sheet and place it under the broiler for a couple of minutes to caramelize the sauce and cheese on top. Watch it carefully if you do this.
7. Rest before slicing
This part is important.
Let the meatloaf rest for about 10–15 minutes before slicing.
I know it’s tempting to cut into it immediately, especially when the smell has been filling the kitchen for hours, but resting helps keep those delicious juices inside.
Slice and serve warm.
The Secret to a Tender Meatloaf
The biggest thing I’ve learned from making meatloaf over the years is not to overwork the meat.
Mix everything just until the ingredients are distributed.
The cooked rice also helps keep this version soft and tender while giving it that familiar stuffed-pepper flavor.
And don’t skip the resting time. It really does make a difference.
Can I Use Different Peppers?
Absolutely.
I usually use a combination of green and red bell peppers because I love the contrast between their flavors.
You can also use:
Yellow bell peppers
Orange bell peppers
A combination of all four colors
Mild banana peppers for a slightly different flavor
If you’re cooking for children who aren’t big fans of peppers, chop them very finely so they blend into the meatloaf.
Can I Use Ground Turkey?
Yes.
Ground turkey can be substituted for ground beef. Since turkey is generally leaner, be careful not to overcook the meatloaf, as it can become dry.
Using a little extra moisture from the ketchup, egg, and cooked rice helps.
What to Serve With Stuffed Pepper Meatloaf
This meatloaf is hearty, so I like serving it with simple sides.
Mashed potatoes are an obvious favorite in my house.
Steamed green beans, roasted vegetables, or a crisp garden salad also work beautifully.
And if you really want to lean into the stuffed-pepper theme, serve it with a little extra tomato sauce and some warm crusty bread.
How to Store Leftovers
Allow the meatloaf to cool before placing it in an airtight container.
Refrigerate leftovers for up to 3–4 days.
I actually think the leftovers are fantastic. The flavors seem to settle together overnight, and a thick slice reheated the next day makes an excellent lunch.
You can also slice the meatloaf before storing it, which makes reheating individual portions very convenient.
Can I Freeze It?
Yes.
Once cooled, wrap the meatloaf tightly and place it in a freezer-safe container or bag.
It can be frozen for up to 2–3 months for the best quality.
Thaw it overnight in the refrigerator and reheat until hot throughout.
When I Make This Recipe
I tend to make this when I want something that feels like a proper family dinner without spending my entire evening cooking.
Last weekend was a perfect example.
I put the meatloaf together earlier in the day, turned on the slow cooker, and went about my afternoon. Every now and then, I’d walk past the kitchen and get another wonderful whiff of that tomato sauce and savory meat cooking away.
By dinner, everyone was ready.
We sat down together, sliced into the meatloaf, and that melted cheese in the middle got everyone’s attention immediately.
There wasn’t much conversation for the first few minutes because everyone was too busy eating.
That’s always a compliment in my book.
I’ve also made this on stressful days when I need dinner to take care of itself. There’s something comforting about knowing that a warm, homemade meal is waiting for you at the end of the day.
And on happy weekends, it’s just a fun recipe to make when I want everyone gathered around the table.

Final Thoughts
This Slow Cooker Stuffed Pepper Meatloaf has everything I want in a comfort-food dinner: tender meat, sweet peppers, savory tomato sauce, rice, and plenty of melty cheese.
It’s familiar but a little different from ordinary meatloaf, and the slow cooker makes it wonderfully convenient.
Most importantly, it’s the kind of meal that brings people to the table.
And after making it for my family, watching everyone go back for another slice, I already know this isn’t going to be a once-in-a-while recipe.
