Instructions
1. Prepare the beef
Pat the beef chuck roast dry with paper towels. Trim away any large pieces of excess fat while leaving some marbling for flavor.
2. Season generously
In a small bowl, combine smoked paprika, onion powder, garlic powder, thyme, salt, black pepper, and chili powder. Rub the seasoning mixture all over the beef.
3. Sear the roast
