Strawberry Biscuits

Small Batch wish it were a big batch Makes 4 3 w-w pts each – no butter needed, no bitter yogurt taste at all! Eat it whole or slice it in half, I had mine whole.

Ingredients

  • 1 cup of all purpose flour 120g I use Trader Joe’s Baker Joesf’s Unbleached All Purpose Flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup of fat free plain Greek yogurt I used Fage
  • 1 Tbsp of sweetener I use Monkfruit, I always use Lakanto
  • 70 g of fresh diced strawberries, fairly small

Instructions

  1. Preheat your oven to 410°
  2. Add the diced strawberries to a small bowl. Sprinkle with the Sweetener.
  3. In a medium bowl, mix flour, salt, baking powder whisk together, add yogurt and strawberries. Mix with a large spoon, I used a wooden spoon, keep mixing pressing the strawberries smashing them into the flour. Keep doing this until all the flour & yogurt is incorporated and your left with a moist dough.
  4. Turn your dough out onto a lightly floured surface. Lightly flour top of dough and pat and shape into about a 5” square. Cut into 4 squares
  5. Place on parchment line baking sheet and bake 16 minutes. Let cool on baking sheet 10 minutes.

So these were going to be bagels but after mixing the dough, I realized it was just a little too sticky so I decided to turn these into the easiest tastiest biscuits I’ve ever make.
