Sweet Potato Rounds w/ Feta, Walnuts + Cranberries

Servings

3–4 (as appetizer or side)
Total time: ~35 minutes

Ingredients

  • 2 medium sweet potatoes (peeled or unpeeled, your choice)
  • 1½ tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)

Toppings

  • ⅓ cup crumbled feta cheese
  • ⅓ cup walnuts, roughly chopped
  • ¼ cup dried cranberries

Optional extras (recommended)

  • 1–2 tsp honey or maple syrup (for drizzle)
  • Fresh parsley or thyme, chopped
  • A pinch of chili flakes for heat

Step-by-Step Instructions

1. Preheat oven

  • Set oven to 200°C (400°F)
  • Line a baking tray with parchment paper

2. Slice the sweet potatoes

  • Cut into round slices about ½ cm (¼ inch) thick
✔️ Keep them even so they cook uniformly

3. Season

  • Place slices in a bowl
  • Toss with olive oil, salt, pepper, and paprika
✔️ Make sure each piece is lightly coated

4. Roast

  • Arrange slices in a single layer (don’t overlap)
  • Roast for 20–25 minutes, flipping halfway
  • They should be soft inside and slightly crispy on edges

5. Toast the walnuts (optional but better)

  • Heat a dry pan over medium heat
  • Toast walnuts for 2–3 minutes until fragrant
✔️ This boosts flavor a lot

6. Assemble

  • Once sweet potato rounds are out of the oven:
    • Sprinkle feta on top
    • Add toasted walnuts
    • Scatter cranberries

7. Finish

  • Drizzle lightly with honey or maple syrup
  • Add herbs and chili flakes if using

8. Serve

  • Best served warm
  • Works great as a snack, side dish, or party appetizer

Pro Tips

  • Cut slices slightly thicker if you want them softer, thinner for crispier bites
  • Don’t overload toppings—balance is key
  • Add feta while potatoes are warm so it softens slightly
  • For extra crispiness: broil for 2–3 minutes at the end

Variations

  • Savory twist: Add a dollop of yogurt sauce instead of honey
  • Vegan version: Skip feta or use plant-based cheese
  • Protein boost: Add shredded chicken or chickpeas
  • Nut swap: Use pecans or almonds instead of walnuts

Flavor Profile

  • Sweet (potato + cranberries)
  • Salty (feta)
  • Crunchy (walnuts)
  • Slight tang + richness
