Tomato and Garlic – a simple yet luxurious addition to any meal

Ingredients:

1 lb (450g) heirloom tomatoes, halved

10 cloves garlic, peeled

1 cup (240ml) olive oil

1 tsp salt

1/2 tsp black pepper

2 sprigs fresh thyme

1 sprig fresh rosemary

Directions:

Preheat your oven to 275°F (135°C).

Arrange the tomato halves and garlic cloves in a single layer in a baking dish.

Sprinkle evenly with salt and black pepper.

Add the sprigs of thyme and rosemary among the tomatoes and garlic.

Pour olive oil over the tomatoes and garlic, ensuring they are well coated.

Bake in the preheated oven for 2 to 2.5 hours, or until the tomatoes are soft and the garlic is golden and tender.

Allow to cool slightly before serving, or store in an airtight container in the refrigerator.
