Weight Watchers Creamy Taco Soup

🛒 Ingredients:
- 1 lb lean ground turkey or chicken (99% fat-free if possible)
- 1 tsp olive oil
- 2–3 cloves garlic, minced
- 1 small onion, diced
- 1 small green bell pepper, diced (optional but flavorful)
- 1 (10 oz) can Rotel diced tomatoes with green chilies (or fresh chopped tomato + a dash of chili flakes)
- 1½ cups low-sodium chicken or beef broth
- ½ cup low-fat cream cheese or ¾ cup fat-free half & half (for lighter texture)
- 2 tbsp taco seasoning (homemade or low-sodium packet)
- Salt and pepper, to taste
- Optional toppings: diced avocado, chopped cilantro, reduced-fat shredded cheese, lime wedges
🔹 Instructions:
- Heat oil in a large pot or Dutch oven over medium-high heat.
- Add ground turkey, onion, and garlic. Cook for 7–8 minutes, breaking up the meat, until browned.
- Add taco seasoning, bell pepper, and tomatoes. Stir and cook for another 3–4 minutes.
- Pour in broth and bring to a gentle simmer.
- Reduce heat to low and stir in low-fat cream cheese (or half & half). Mix until smooth and creamy.
- Simmer for 10–15 minutes until thickened slightly.
- Serve hot, topped with fresh cilantro, a sprinkle of reduced-fat cheese, and a squeeze of lime.
