Ingredients:
1 pound smoked turkey sausage, sliced
2 cans white beans (like cannellini or Great Northern beans), drained and rinsed
1 medium onion, chopped
2 cloves garlic, minced
1 tablespoon olive oil
4 cups chicken broth
1 teaspoon dried thyme
1 teaspoon dried parsley
Salt and pepper to taste
2 cups cooked white rice
Fresh parsley, chopped (for garnish)
Instructions:
Prepare the Sausage
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes. Remove the sausage from the pot and set aside.
Sauté the Aromatics
In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.
Combine and Simmer
Return the sausage to the pot and add the white beans, chicken broth, dried thyme, and dried parsley. Season with salt and pepper to taste. Stir well to combine.
Cook and Thicken
Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the flavors meld together and the broth slightly thickens.
Serve and Enjoy
Spoon the cooked white rice into bowls, then ladle the white bean and sausage mixture over the top. Garnish with fresh parsley.
