🥩 Zero-Carb Garlic Herb Ribeye Steak
Ingredients
1 ribeye steak (1–1.5 inches thick)
1–2 tbsp butter (or ghee)
1 tbsp olive oil
2–3 garlic cloves, smashed or sliced
Fresh herbs: thyme, rosemary, or parsley
Salt & black pepper
Optional: bone marrow round or herb butter topper (as shown in the image)
Instructions
1. Bring Steak to Room Temperature
Remove steak from the fridge 20–30 minutes before cooking so it cooks evenly.
2. Season the Steak
Generously season both sides with:
Salt
Black pepper
(You may also add paprika or garlic powder, all still zero carb.)
3. Sear the Steak
Heat a cast-iron skillet on high until very hot.
Add olive oil.
Place the ribeye in the pan and sear 3–4 minutes on the first side.
Flip and sear another 3 minutes.
4. Baste With Butter & Garlic
Reduce heat to medium.
Add butter, garlic, and fresh herbs to the skillet.
Tilt the pan and spoon the melted butter over the steak repeatedly for 1–2 minutes.
5. Optional Oven Finish
If your steak is thick:
Move skillet to a 400°F (205°C) oven for 4–6 minutes
(aim for 130°F internal temp for medium-rare).
6. Rest the Steak
Let the steak rest 5–7 minutes so the juices redistribute.
7. Serve
Top with:
A slice of roasted garlic butter
Fresh herbs
A bone-marrow medallion (like in the photo)
All zero carbs!
