Creamy Chicken & Mushroom

Ingredients (Serves 4)

For the Chicken & Mushrooms:

  • 1 lb (450 g) chicken breast or thighs, cut into bite-sized pieces

  • 2 tbsp olive oil or butter

  • 1 medium onion, finely chopped

  • 3 cloves garlic, minced

  • 8 oz (225 g) mushrooms, sliced (button, cremini, or a mix)

  • Salt & black pepper, to taste

  • 1 tsp dried thyme or rosemary

For the Creamy Sauce:

  • 1 cup heavy cream (or half-and-half for lighter version)

  • 1/2 cup chicken broth

  • 1/4 cup grated Parmesan cheese

  • 1 tsp Dijon mustard (optional, for depth)

  • Fresh parsley, chopped, for garnish


Instructions

1. Cook the Chicken

  1. Heat olive oil or butter in a large skillet over medium-high heat.

  2. Season chicken with salt and pepper, then cook for 5–7 minutes until browned and cooked through. Remove chicken from skillet and set aside.

2. Cook the Mushrooms & Onion

  1. In the same skillet, add a little more oil if needed.

  2. Sauté onions for 2–3 minutes until soft.

  3. Add garlic and cook 30 seconds more.

  4. Add mushrooms and thyme, sauté 5–7 minutes until mushrooms release moisture and become golden.

3. Make the Creamy Sauce

  1. Reduce heat to medium. Add chicken broth, scraping any bits off the bottom.

  2. Stir in heavy cream, Parmesan, and Dijon mustard. Simmer 3–5 minutes until sauce thickens.

  3. Return chicken to the skillet, toss to coat in sauce, and cook 2–3 minutes until heated through.

4. Serve

  • Garnish with fresh parsley.

  • Serve over rice, pasta, mashed potatoes, or with crusty bread to soak up the creamy sauce.


Tips:

  • Extra Flavor: Add a splash of white wine when sautéing mushrooms.

  • Veggie Boost: Toss in spinach, peas, or sun-dried tomatoes at the end.

  • Make Ahead: Cook chicken ahead, store separately, and reheat in sauce for a quick meal.


This dish is comforting, creamy, and perfect for a weeknight dinner or a cozy weekend meal.
