Oven-Baked Honey Garlic Chicken with Baby Potatoes

🛒 Ingredients

Chicken & Potatoes

  • 4 bone-in, skin-on chicken thighs (or breasts)

  • 1 lb (450 g) baby potatoes, halved

  • 2 tablespoons olive oil

  • Salt and pepper, to taste

  • 1 teaspoon smoked paprika (optional)

Honey Garlic Sauce

  • ¼ cup honey

  • 3 cloves garlic, minced

  • 2 tablespoons soy sauce

  • 1 tablespoon apple cider vinegar (or lemon juice)

  • 1 teaspoon Dijon mustard (optional, for depth)

Garnish

  • Fresh parsley, chopped

  • Lemon wedges (optional)


🔪 Instructions

1️⃣ Preheat Oven

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease a baking dish.


2️⃣ Prepare Chicken & Potatoes

  • Pat chicken dry and season with salt, pepper, and smoked paprika.

  • Toss baby potatoes with 1 tablespoon olive oil, salt, and pepper.

  • Arrange chicken and potatoes in a single layer on the baking sheet.


3️⃣ Make Honey Garlic Sauce

In a small bowl, whisk together:

  • Honey

  • Minced garlic

  • Soy sauce

  • Apple cider vinegar

  • Dijon mustard (if using)

Brush half the sauce over the chicken and potatoes. Reserve the rest for basting later.


4️⃣ Bake

  • Bake for 25 minutes.

  • Remove from oven and baste chicken with remaining sauce.

  • Return to oven and bake 15–20 more minutes, until chicken is cooked through (internal temp 165°F / 75°C) and potatoes are tender.

  • Optional: broil for 2–3 minutes for extra caramelization.


5️⃣ Serve

  • Garnish with chopped parsley and lemon wedges.

  • Serve warm, straight from the pan for easy cleanup.
