Ingredients
For the Honey Lime Chicken
- 2 boneless, skinless chicken breasts, diced
- 2 tbsp honey
- 2 tbsp fresh lime juice
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp cumin
- ½ tsp salt
- ¼ tsp black pepper
For the Wonton Shells
- 12 wonton wrappers
- Cooking spray or 1 tbsp olive oil
For the Toppings
- 1 large avocado, diced
- 1 cup shredded lettuce
- ½ cup cherry tomatoes, diced
- ¼ cup finely chopped red onion
- ½ cup crushed nacho chips
- ¼ cup shredded cheddar cheese
- 2 tbsp fresh cilantro, chopped
Optional Lime Drizzle
- ¼ cup Greek yogurt
- 1 tbsp lime juice
- 1 tsp honey
Instructions
- Make the wonton shells: Preheat the oven to 375°F (190°C). Lightly spray both sides of the wonton wrappers. Place each wrapper between the bars of an inverted muffin tin to form a taco shape. Bake for 7–9 minutes, until golden and crispy. Remove and cool.
- Prepare the chicken: In a bowl, whisk together honey, lime juice, olive oil, garlic powder, paprika, cumin, salt, and pepper. Add the diced chicken and toss until well coated.
- Heat a skillet over medium-high heat. Cook the chicken for 6–8 minutes, stirring occasionally, until completely cooked and lightly caramelized.
- Make the lime drizzle: Mix Greek yogurt, lime juice, and honey until smooth.
- Assemble: Fill each crispy wonton shell with shredded lettuce, then add honey-lime chicken. Top with avocado, tomatoes, red onion, cheddar cheese, and crushed nacho chips.
- Drizzle with the lime sauce and garnish with fresh cilantro.
- Serve immediately while the wonton shells are crisp.
Tips
- Bake the wonton shells close to serving time for maximum crispiness.
- Rotisserie chicken can be used as a shortcut.
- Add sliced jalapeños for extra heat.
- For a lighter version, use baked tortilla cups instead of fried shells.
