Ingredients:
- 2 boneless, skinless chicken breasts
- Salt and black pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 6-8 asparagus spears, trimmed
- 4 slices of provolone or Swiss cheese
- 2 tablespoons olive oil
- 1 tablespoon Italian seasoning (optional)
- 1 lemon, sliced for garnish (optional)
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Chicken:
- Place each chicken breast between plastic wrap and gently pound them to an even thickness.
- Season both sides of each chicken breast with salt, black pepper, garlic powder, and paprika.
- Assemble the Chicken:
- Lay 2 slices of cheese on each chicken breast.
- Place 3-4 asparagus spears on top of the cheese.
- Carefully roll up each chicken breast, securing with toothpicks if necessary.
- Sear the Chicken:
- In an oven-safe skillet, heat olive oil over medium-high heat.
- Sear the stuffed chicken breasts for 2-3 minutes per side until golden brown.
- Bake in the Oven:
- If your skillet is oven-safe, transfer it directly to the preheated oven. Otherwise, transfer the chicken to a baking dish.
- Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the juices run clear.
- Optional: Broil for Crispy Top (Optional):
- If you’d like a crispy top, you can broil the chicken for an additional 2-3 minutes, watching closely to prevent burning.
- Serve:
- Remove the toothpicks before serving.
- Optionally, sprinkle Italian seasoning over the top and garnish with lemon slices.
