🌮 Beef Enchiladas (Classic & Easy)
🧾 Ingredients
For the Beef Filling
1 lb (450 g) ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp salt
½ tsp black pepper
1 tsp cumin
1 tsp chili powder
½ tsp paprika
2 tbsp tomato paste (or ½ cup tomato sauce)
For the Enchiladas
8–10 flour or corn tortillas
1½ cups enchilada sauce (store-bought or homemade)
2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
Optional Toppings (after baking)
Sour cream
Chopped cilantro
Diced tomatoes
Sliced green onions
👩🍳 Instructions
1️⃣ Cook the Beef
Heat a pan over medium heat.
Add ground beef and cook until browned.
Add onion and garlic; cook 2–3 minutes until soft.
Stir in salt, pepper, cumin, chili powder, paprika, and tomato paste.
Cook for another 2–3 minutes. Remove from heat.
2️⃣ Assemble the Enchiladas
Preheat oven to 375°F (190°C).
Spread a thin layer of enchilada sauce on the bottom of a baking dish.
Fill each tortilla with beef and a little cheese.
Roll tightly and place seam-side down in the dish.
3️⃣ Bake
Pour remaining enchilada sauce over the tortillas.
Sprinkle the rest of the cheese on top.
Cover with foil and bake 20 minutes.
Uncover and bake 10 more minutes until bubbly and lightly golden.
🧀 Serving Tips
Let rest 5 minutes before serving.
Add toppings just before eating.
Serve with rice, beans, or salad.
