Broccoli Cheese Patties
π Ingredients (Makes 8β10 patties)
2 cups broccoli florets, finely chopped
1 cup shredded cheddar cheese (or mozzarella)
Β½ cup breadcrumbs (regular or panko)
ΒΌ cup grated Parmesan (optional but recommended)
2 large eggs
2 cloves garlic, minced
ΒΌ small onion, finely chopped
Β½ tsp salt
ΒΌ tsp black pepper
Β½ tsp paprika (optional)
2β3 tbsp oil (for frying)

Prep the broccoli
Steam or microwave the broccoli for 2β3 minutes until slightly tender. Let cool, then chop very fine.
(Tip: Remove excess moisture by squeezing with a clean towel.)Mix everything together
In a large bowl, combine:Broccoli
Cheese
Breadcrumbs
Eggs
Garlic & onion
Salt, pepper & paprika
Mix until fully combined. The mixture should hold together when pressed.
Shape the patties
Scoop about 2 tablespoons of mixture and form into small flat patties.Cook
Heat oil in a pan over medium heat.
Cook patties 3β4 minutes per side until golden brown and crispy.Serve

Preheat oven to 400Β°F (200Β°C)
Place patties on lined baking sheet
Lightly spray with oil
Bake 18β20 minutes, flipping halfway

If mixture is too wet β add more breadcrumbs
If too dry β add 1β2 tbsp milk
Want extra crisp? Chill patties 15 minutes before frying
