Carnivore Breakfast Muffins
🥩 Ingredients:
1 lb ground meat (beef, pork, or sausage)
6 large eggs
1/2 cup shredded cheese (cheddar, mozzarella, or Parmesan — optional)
1/4 cup heavy cream (optional for fluffiness)
Salt (like Redmond’s Real Salt), to taste
Optional add-ins:
Bacon bits
Cooked crumbled sausage
Liver powder or finely chopped liver
Bone marrow chunks or beef tallow for richness
🔥 Instructions:
Preheat oven to 375°F (190°C). Grease a muffin tin generously with beef tallow, butter, or line with parchment muffin cups.
Brown your ground meat in a skillet. Season with salt (and optional carnivore-friendly extras like organ meat powder).
In a bowl, whisk eggs and cream (if using). Stir in cheese and any extras.
Distribute cooked meat evenly into each muffin cup (fill about halfway).
Pour egg mixture on top of the meat in each cup until about ¾ full.
Bake for 20–25 minutes, or until muffins are puffed and set. A toothpick should come out clean.
Cool slightly and remove from tin. These keep well in the fridge for 4–5 days or can be frozen.
