Ingredients

  • 2 lbs ground beef (80/20 or fattier works best)

  • 1 tsp salt (or to taste)

  • ½ tsp black pepper (optional, omit for strict carnivore)

  • 1 tsp garlic powder (optional)

  • 1 tsp onion powder (optional)

  • 8 oz cream cheese, softened

  • 1 cup heavy cream

  • 2 cups shredded cheddar cheese (or cheddar + mozzarella)

  • 2 large eggs

  • 2 tbsp butter or beef tallow (for greasing)


Instructions

  1. Preheat oven to 375°F (190°C)
    Grease a 9×13-inch baking dish with butter or tallow.

  2. Cook the beef

    • Brown ground beef in a skillet over medium heat.

    • Season with salt (and optional spices).

    • Drain excess grease only if there’s a lot—fat adds flavor.

  3. Make the creamy sauce

    • In a bowl, whisk together:

      • Cream cheese

      • Heavy cream

      • Eggs

    • Mix until smooth (a hand mixer helps).

  4. Assemble the casserole

    • Spread cooked beef evenly in the baking dish.

    • Pour the cream mixture over the beef.

    • Sprinkle shredded cheese evenly on top.

  5. Bake

    • Bake uncovered for 30–35 minutes, until bubbly and golden.

    • Let rest 10 minutes before serving (it firms up).


Optional Carnivore Add-Ins

  • Crumbled bacon on top

  • Extra cheese layers

  • Beef bone marrow mixed into the meat

  • Egg yolks stirred into the sauce (richer texture)


Storage

  • Fridge: up to 4 days

  • Freezer: up to 2 months

  • Reheat in oven or skillet (microwave works too)
