Cheesy Golden Roasted Potatoes
A crispy outside, fluffy inside potato dish coated in garlic, herbs, and melty cheese. Perfect as a side dish, snack, or party appetizer.
🛒 Ingredients (Serves 3–4)
600 g potatoes (baby potatoes or medium potatoes, cubed)
3 tbsp olive oil
3 cloves garlic (minced)
½ tsp salt
½ tsp black pepper
1 tsp paprika (optional but recommended)
1 tsp dried oregano or Italian herbs
¾ cup shredded mozzarella cheese
¼ cup grated parmesan cheese
1 tbsp chopped parsley (for garnish)
👨🍳 Instructions
1️⃣ Prep the potatoes
Preheat oven to 220°C (425°F).
Wash potatoes and cut into halves or bite-size cubes.
Boil them in salted water for 5–6 minutes (this makes them crispier later).
Drain and let them dry for a minute.
2️⃣ Season
In a large bowl mix potatoes with:
olive oil
minced garlic
salt
pepper
paprika
oregano
Toss until all potatoes are coated.
3️⃣ Roast
Spread potatoes on a baking tray in a single layer.
Roast for 25–30 minutes, flipping halfway.
Roast until deep golden and crispy edges appear.
4️⃣ Add the cheese
Sprinkle mozzarella + parmesan over the hot potatoes.
Return to oven for 3–5 minutes until the cheese melts and turns lightly golden.
5️⃣ Garnish & serve
Sprinkle fresh parsley on top.
Serve hot and crispy.

For extra crispiness: add 1 tbsp cornflour while seasoning.
For spicy version: add ½ tsp chili flakes.
Air fryer option: cook at 200°C for 18–20 minutes.
