Cheesy Golden Roasted Potatoes

A crispy outside, fluffy inside potato dish coated in garlic, herbs, and melty cheese. Perfect as a side dish, snack, or party appetizer.


🛒 Ingredients (Serves 3–4)

  • 600 g potatoes (baby potatoes or medium potatoes, cubed)

  • 3 tbsp olive oil

  • 3 cloves garlic (minced)

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika (optional but recommended)

  • 1 tsp dried oregano or Italian herbs

  • ¾ cup shredded mozzarella cheese

  • ¼ cup grated parmesan cheese

  • 1 tbsp chopped parsley (for garnish)


👨‍🍳 Instructions

1️⃣ Prep the potatoes

  1. Preheat oven to 220°C (425°F).

  2. Wash potatoes and cut into halves or bite-size cubes.

  3. Boil them in salted water for 5–6 minutes (this makes them crispier later).

  4. Drain and let them dry for a minute.


2️⃣ Season

In a large bowl mix potatoes with:

  • olive oil

  • minced garlic

  • salt

  • pepper

  • paprika

  • oregano

Toss until all potatoes are coated.


3️⃣ Roast

  1. Spread potatoes on a baking tray in a single layer.

  2. Roast for 25–30 minutes, flipping halfway.

  3. Roast until deep golden and crispy edges appear.


4️⃣ Add the cheese

  1. Sprinkle mozzarella + parmesan over the hot potatoes.

  2. Return to oven for 3–5 minutes until the cheese melts and turns lightly golden.


5️⃣ Garnish & serve

  • Sprinkle fresh parsley on top.

  • Serve hot and crispy.


Pro Tips

  • For extra crispiness: add 1 tbsp cornflour while seasoning.

  • For spicy version: add ½ tsp chili flakes.

  • Air fryer option: cook at 200°C for 18–20 minutes.

Mix:

  • 3 tbsp mayonnaise

  • 1 tbsp ketchup

  • ½ tsp garlic powder

  • pinch chili flakes

Perfect dipping sauce for these potatoes.
