Cheesy Mexican Lasagna Recipe


For the Meat Sauce:
1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 packet taco seasoning
1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) corn, drained
1 can (15 ounces) diced tomatoes, undrained
1 can (15 ounces) tomato sauce
1 can (4 ounces) diced green chilies
For the Cheese Mixture:
2 cups ricotta cheese
1 large egg
1 teaspoon ground cumin
1 teaspoon chili powder
2 cups shredded Mexican cheese blend (cheddar, Monterey Jack, etc.)

For Assembly:

9-12 no-boil lasagna noodles
2 cups shredded Mexican cheese blend (for topping)
Fresh cilantro, chopped (for garnish)


Preheat Oven:
Preheat your oven to 375°F (190°C).
Prepare the Meat Sauce:
In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
Add chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
Stir in the taco seasoning, black beans, corn, diced tomatoes, tomato sauce, and diced green chilies. Simmer for about 10 minutes, stirring occasionally.

Prepare the Cheese Mixture:

In a medium bowl, combine ricotta cheese, egg, ground cumin, chili powder, and 2 cups of the shredded Mexican cheese blend. Mix well.

Assemble the Lasagna:

Spread a thin layer of the meat sauce on the bottom of a 9×13-inch baking dish.
Place a layer of lasagna noodles over the meat sauce.
Spread a layer of the cheese mixture over the noodles.
Repeat layers: meat sauce, noodles, cheese mixture, ending with a layer of meat sauce.
Sprinkle 2 cups of shredded Mexican cheese blend on top.


Cover the baking dish with aluminum foil.
Bake in the preheated oven for 25 minutes.
Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve:

Let the lasagna rest for 10-15 minutes before slicing.
Garnish with freshly chopped cilantro before serving.


Feel free to add other vegetables like bell peppers or jalapeños to the meat sauce for extra flavor.
For a spicier lasagna, use hot taco seasoning and add some crushed red pepper flakes to the meat sauce.
