Cheesy Philly Cheesesteak Sliders

These warm, cheesy Philly Cheesesteak Sliders are loaded with tender seasoned beef, sautéed onions and peppers, gooey melted provolone cheese, and baked inside soft Hawaiian rolls brushed with garlic butter. They’re perfect for game day, family dinners, parties, or an easy weeknight meal.

Ingredients

For the Filling

  • 2 tbsp olive oil
  • 1 lb (450g) shaved beef steak or thinly sliced ribeye
  • 1 medium onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • ½ red bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste

For the Sliders

  • 12 Hawaiian sweet rolls (kept connected)
  • 8–10 slices provolone cheese (or mozzarella)
  • 2 tbsp butter, melted

Garlic Butter Topping

  • 2 tbsp melted butter
  • 1 tsp garlic powder
  • 1 tsp dried parsley (or 1 tbsp fresh parsley)
  • ¼ tsp onion powder
  • Pinch of salt
  • Optional: 2 tbsp grated Parmesan cheese

Instructions

1. Prepare the Filling

  • Heat olive oil in a large skillet over medium-high heat.
  • Add onions and bell peppers and cook for 5–6 minutes until softened.
  • Stir in garlic and cook for 30 seconds.
  • Add the beef, breaking it apart while cooking.
  • Season with Worcestershire sauce, Italian seasoning, smoked paprika, salt, and pepper.
  • Cook until the beef is browned and no liquid remains.

2. Prepare the Rolls

  • Preheat oven to 350°F (175°C).
  • Slice the entire slab of Hawaiian rolls horizontally without separating them.
  • Place the bottom half in a greased 9×13-inch baking dish.

3. Assemble

  • Layer half of the provolone cheese over the bottom rolls.
  • Spread the cheesesteak mixture evenly.
  • Top with the remaining provolone slices.
  • Place the top half of the rolls over the cheese.

4. Add Garlic Butter

  • Mix melted butter, garlic powder, onion powder, parsley, salt, and Parmesan (if using).
  • Brush generously over the tops of the rolls.

5. Bake

  • Cover loosely with foil.
  • Bake for 15 minutes.
  • Remove foil and bake another 5–8 minutes until the tops are golden brown and the cheese is melted and bubbly.

6. Serve

  • Let cool for 5 minutes.
  • Slice into individual sliders.
  • Serve with fries, potato wedges, coleslaw, or a fresh salad.

Tips

  • Freeze the steak for 20 minutes before slicing to get ultra-thin pieces.
  • Mushrooms make a delicious addition to the filling.
  • For extra flavor, add a few slices of pepper jack cheese.
  • Brush the rolls with garlic butter immediately before baking for a glossy, flavorful crust.

Storage

  • Refrigerate leftovers in an airtight container for up to 3 days.
  • Reheat in a 350°F (175°C) oven for 8–10 minutes or in the microwave for about 1 minute.
