Chocolate-Coated Fruit & Nut Bars

For the Base
1 cup mixed nuts (almonds, peanuts, cashews)
ยฝ cup dried fruits (dates, raisins, cranberries, chopped apricots)
ยผ cup oats
2 tablespoons honey (or maple syrup)
2 tablespoons peanut butter (or any nut butter)
For the Chocolate Coating
150g dark or milk chocolate
1 teaspoon coconut oil (optional, for smooth melting)

1. Prepare the Base
Roughly chop nuts and dried fruits
In a bowl, mix nuts, dried fruits, and oats
2. Bind the Mixture
Warm honey and peanut butter slightly (so they mix easily)
Pour into the nut mixture
Mix well until everything sticks together

3. Shape the Bars
Line a tray with baking paper
Press mixture firmly into a rectangle (about 1โ1.5 cm thick)

5. Melt the Chocolate
Melt chocolate using double boiler or microwave (in short bursts)
Stir until smooth
Add coconut oil for a glossy finish
6. Coat the Bars
Dip each bar into melted chocolate or drizzle on top
Place on parchment paper
7. Set the Chocolate
Refrigerate for 15โ20 minutes until firm
