Ingredients
- 2 large cucumbers
- 1 package 8 oz cream cheese, softened
- 2 tablespoons fresh dill chopped (or 1 tablespoon dried dill)
- 2 tablespoons fresh chives chopped
- 1 tablespoon fresh parsley chopped
- 1 clove garlic minced
- Salt and pepper to taste
- 1 pint cherry tomatoes halved
- Fresh dill sprigs or additional chives for garnish (optional)
Instructions
- Prepare the Cucumbers:
- Wash the cucumbers and peel them if desired. Slice them into 1/2-inch thick rounds.
- Use a small spoon or melon baller to scoop out a small indentation in the center of each cucumber slice, being careful not to scoop all the way through. This will hold the cream cheese mixture.
- Make the Herbed Cream Cheese:
- In a medium bowl, mix the softened cream cheese with the chopped dill, chives, parsley, minced garlic, salt, and pepper until well combined.
- Assemble the Cucumber Bites:
- Using a small spoon or a piping bag fitted with a star tip, fill each cucumber cup with the herbed cream cheese mixture.
- Top each filled cucumber slice with a cherry tomato half, cut side down.
- Garnish:
- Garnish with fresh dill sprigs or additional chopped chives, if desired.
- Serve:
- Arrange the cucumber bites on a serving platter and serve immediately, or refrigerate until ready to serve.
