Delicious Vegan Mushroom Meatballs

These plant-based mushroom meatballs are packed with flavor and perfect for pasta, salads, or as a snack. Made with quinoa, walnuts, and mushrooms, they offer a hearty texture and savory taste.

Ingredients:
1 cup mushrooms, finely chopped
1/2 cup cooked quinoa
1/4 cup walnuts, finely chopped
1/4 cup onion, finely diced
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
2 tbsp nutritional yeast
1 tbsp soy sauce
1 tbsp olive oil
1/4 cup chickpea flour
Salt and pepper to taste
Directions:
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Sauté onions, garlic, and mushrooms in olive oil until soft (5-7 mins).
Mix sautéed vegetables with quinoa, walnuts, parsley, nutritional yeast, soy sauce, chickpea flour, salt, and pepper.
Form 1-2 tbsp portions into balls and place on the baking sheet.
Bake for 20-25 minutes, turning halfway, until golden and firm.
