Ingredients

  • 4 white fish fillets (cod, haddock, tilapia, halibut, or sea bass)

  • 3 tbsp olive oil

  • 3 cloves garlic, minced

  • Zest of 1 lemon

  • Juice of ½ lemon

  • 1 tsp dried oregano

  • ½ tsp paprika

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ cup cherry tomatoes, halved

  • ¼ cup kalamata olives, sliced

  • ¼ cup red onion, thinly sliced

  • 1 tbsp capers (optional)

  • 2 tbsp fresh parsley or basil, chopped

  • Optional: crumbled feta cheese


Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.

  2. Pat fish dry and place in the dish.

  3. In a small bowl, mix olive oil, garlic, lemon zest, lemon juice, oregano, paprika, salt, and pepper.

  4. Spoon mixture evenly over the fish.

  5. Scatter tomatoes, olives, red onion, and capers around and on top of the fish.

  6. Bake 12–15 minutes, depending on thickness, until fish flakes easily.

  7. Sprinkle with fresh herbs (and feta, if using) before serving.
