FOR THE DRESSING:
- 1/3 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 teaspoon dry ground mustard
- 1/4 cup parmesan cheese, grated, plus more for serving
- Kosher salt and freshly ground black pepper, to taste
FOR THE SALAD:
- 1 head iceberg lettuce, finely chopped
- 1 head romaine lettuce, finely chopped
- 1/4 lb Italian salami, julienned
- 1 cup mozzarella cheese, grated
- 1 (15 oz) can garbanzo beans, rinsed and drained
PREPARATION
- In a large bowl, whisk together olive oil, red wine vinegar, dry mustard, parmesan, and salt and pepper until well combined.
- To the same bowl, add lettuces, salami, mozzarella, and garbanzo beans. Toss to coat and adjust seasoning as needed.
- Serve with more parmesan and enjoy!
