Garlic Parmesan Jicama Fries

Ingredients
2 medium jicama roots
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon paprika
1 teaspoon Italian seasoning
1/2 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper
1/2 cup freshly grated Parmesan cheese
2 tablespoons chopped fresh parsley (optional)
Cooking spray or extra oil for the pan
Instructions
Prep the jicama
Peel the jicama and cut into fry-shaped sticks, about 1/4 inch thick.Remove excess moisture (important)
Bring a large pot of salted water to a boil. Add jicama and boil for 10 minutes.
Drain well and pat completely dry with paper towels. This helps the fries crisp.Season
In a large bowl, toss jicama with olive oil, garlic, paprika, Italian seasoning, salt, and pepper.Bake
Preheat oven to 425°F (220°C).
Lightly grease a baking sheet and spread fries in a single layer.
Bake for 25 to 30 minutes, flipping halfway, until golden and slightly crisp.Add Parmesan
Remove from oven, sprinkle evenly with Parmesan, and return to oven for 5 to 10 minutes until cheese melts and lightly browns.Finish and serve
Garnish with chopped parsley if using. Serve hot.
Optional Air Fryer Method
Preheat air fryer to 400°F (205°C).
Cook seasoned jicama in a single layer for 15 to 18 minutes, shaking halfway.
Add Parmesan for the last 3 to 5 minutes.
Tips
Jicama will not get as crispy as potatoes, but boiling and drying makes a big difference.
For extra crunch, add 1 tablespoon almond flour or breadcrumbs before baking.
Serve with garlic aioli, ranch, or spicy mayo.
