Greek Chicken Gyro Bowl with Whipped Garlic Feta

🛒 Ingredients (Serves 4)
🍗 Greek Chicken Marinade
1½ lbs boneless, skinless chicken thighs (or breasts)
3 tbsp olive oil
Juice of 1 lemon
3 cloves garlic, minced
1 tsp dried oregano
1 tsp dried thyme
1 tsp paprika
½ tsp cumin
¾ tsp salt
½ tsp black pepper
🍚 Base
2 cups cooked jasmine rice or basmati rice
(or quinoa, cauliflower rice, or chopped romaine for low-carb)
🥒 Fresh Toppings
1 cup cherry tomatoes, halved
1 cup diced cucumber
¼ red onion, thinly sliced
½ cup Kalamata olives
Fresh parsley or dill
🧄 Whipped Garlic Feta
6 oz feta cheese
3 oz cream cheese (softened)
1–2 tbsp olive oil
1–2 cloves garlic
1 tbsp lemon juice
1–2 tbsp Greek yogurt (for extra creaminess, optional)
👩🍳 Instructions
1️⃣ Marinate the Chicken
In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, paprika, cumin, salt, and pepper.
Add chicken and coat well.
Cover and marinate for at least 30 minutes (or up to 24 hours in the fridge for deeper flavor).
2️⃣ Cook the Chicken
Heat a skillet or grill pan over medium-high heat.
Cook chicken for 5–7 minutes per side, until internal temperature reaches 165°F (75°C).
Let rest for 5 minutes, then slice into strips.
3️⃣ Make the Whipped Garlic Feta
In a food processor, combine:
Feta
Cream cheese
Garlic
Lemon juice
Olive oil
Blend until smooth and creamy.
Add Greek yogurt if needed for a lighter, fluffier texture.
Taste and adjust salt or lemon as desired.
4️⃣ Assemble the Bowls
Divide rice among bowls.
Top with sliced chicken, tomatoes, cucumber, red onion, and olives.
Add a generous spoonful of whipped garlic feta.
Sprinkle fresh herbs over the top.
